Summer time brings hot weather, beaches, and blossoms such as sunflowers, and the Girasol cooler (Spanish for Sunflower cooler) is the perfect drink for the season. I came up with this drink as the perfect libation to get you through you the heat.
Girasol Cooler
1 3/4 Light rum
2 oz. Honey dew melon (twice strained)
1/2 oz. simple syrup
1/4 oz. fresh lemon strained lemon juice
Place all ingredients in a cocktail shaker with ice and shake with ice, vigorously for 30 seconds and strain into a chilled cocktail 5 oz. cocktail glass with ice.
