Created at the Pegu Club, New York City by Founder Audrey Saunders calls this her “ambassador to gin.”
¾ ounce fresh lime juice
1 ounce simple syrup
2 sprigs mint, plus more for garnish
1 ½ ounces of gin
1 ounce ginger beer
Combine lime juice, simple syrup, and mint in a mixing glass and muddle well. Add gin, ginger beer, and ice. Shake well. Strain into an ice-filled highball glass. Garnish with mint.
