From Jerry Thomas’ legendary 1862 “Bar-Tender’s Guide”. Named for Alfonso Ferrero La Marmora, a hero of the Crimean War (1853-56) between Russia & Western Europe. He went on to become Sixth Prime Minister of Italy. Originally meant as a punch, which were very popular in the nineteenth century.
This reduced recipe makes 2 servings:
½ oz dark Jamaican rum (Myer’s Dark Rum)
1 oz brandy
½ oz medium bodied Jamaican rum (Appleton Estate or Bacardi Gold)
½ oz maraschino liqueur
2 oz orgeat syrup
½ oz fresh lemon juice
2 large slices of lemon peel
1 tsp powdered sugar
4 oz soda water
3 oz champagne
Muddle lemon peel, powdered sugar and dark rum in mixing glass. Add remaining ingredients except champagne and stir briskly. Pour into 2 goblets filled with 2 or 3 large ice cubes. Top with champagne.
