Created by William Schmidt in his 1892 book “The Flowing Bowl”. Schmidt favored unusual ingredients when creating cocktails, often resulting in outrageous combinations like red wine, rum and vanilla ice cream. This one, however, is a winner.
2 ounces applejack
2 ounces peach brandy
1 ounce fresh squeezed lime juice
1 small egg white
1 teaspoon powdered sugar
Shake all ingredients except soda water hard with ice and strain into a chilled goblet or large cocktail glass. Add a splash of soda water.
