Starboard Light

This is one of Victor Bergeron’s original recipes for the 1958 opening of his Trader Vic’s restaurants located inside the original Havana Hilton a few months before the Cuban revolution.

He finally revealed the top-secret recipe for the Starboard Light in the 1968 edition of his book Trader Vic’s Bartender’s Guide.  Asked by Conrad Hilton to create one of his signature restaurants inside the planned Havana Hilton, it proved to be Vic’s shortest lived location.  This Trader Vic’s restaurant remains completely intact in Havana, and is one of the best remaining examples of modernist pop-primitivism.

Starboard LightStarboard Light Cocktail

2 tsp honey (syrup)
1 oz lemon juice
½ oz passion fruit syrup
1 egg white
2 oz scotch
1 scoop crushed ice
Pineapple stick & mint sprig

Blend all at high-speed in blender for 10 sec. Pour into a ‘Starboard Light’ glass, or similar 10 oz. tumbler. Garnish with pineapple stick and mint sprig.
