Jack Rabbit Cocktail

Springtime means Easter and that equals peeps and bunnies! Let’s raise a glass to celebrate the season with the Jack Rabbit cocktail. I found this gem in my copy of Old Mr. Boston Bartenders guide from 1935.  It includes gin, vermouth, apricot and Cointreau when combined, makes my mouth water just thinking about it!  This is a great drink to offer your guest for Easter or Passover.

Jack Rabbit Cocktail

1/3 oz. 209 Gin

1/3 oz. French (Dry) Vermouth

1/6 oz. Apricot Nectar liqueur

1/6 oz. Cointreau

Combine all ingredients in a cocktail shaker with ice, shake hard for 20 – 30 seconds and strain in a 4 -5 oz chilled cocktail glass.
