Named after a boisterous group that met at the Bellevue Stratford hotel in Philadelphia from the 1880’s through World War I. The cocktail didn’t catch on outside of Philadelphia until 1910 when it was reported popular in New York. This version was served at the old Waldorf-Astoria in New York, which was torn down to make way for the Empire State Building.
Clover Leaf Cocktail
2 oz gin
¾ oz fresh squeezed lemon juice
½ bar spoon powdered sugar, or ¾ oz simple syrup
½ oz raspberry syrup,
or muddle 6 fresh raspberries with 1½ tsp powdered sugar,
or 1 tsp raspberry preserves
2 tsp egg white, or 1 egg white for every 2 cocktails
1 mint sprig
Shake all ingredients hard with ice and strain into a chilled 4 -5 oz cocktail glass. Shake the ingredients with a sprig of mint, and garnish with a clover leaf to make it a Clover Leaf Cocktail.
